Mediterranean Chicken Noodle Soup (Slow Cooker/Instant Pot)

It’s finally fall and the weather has been perfect recently for soup, so I’ve been pulling out all my tried and true recipes and experimenting with new ones. This hearty soup is packed with protein and will be a crowd-pleaser, even my kids love it! It’s a unique spin on a classic dish, but most of the ingredients I already had in my fridge and my pantry. I love how simple it is to throw all the ingredients in a pot and the soup is ready when you are. All you have to do is cook your pasta on the side and bam! A quick, easy, and hearty meal that is super filling!

Ingredients:

1 lb boneless skinless chicken breast
1 14 oz can no-salt-added fire-roasted diced tomatoes
4 cups low-sodium chicken broth
1.5 cups chopped yellow onion
1 cup chopped orange bell pepper
2 tbsp minced garlic
1 tbsp Italian seasoning
1/2 tsp ground black pepper
1/2 tsp salt
1/4 tsp crushed red pepper
1 bay leaf (optional)
1 box or 8 oz Banza Pasta (2 oz per serving)
1/2 cup grated Parmesan cheese

Instructions:

For Instant Pot:

Add all ingredients except pasta and cheese to InstantPot. Press the Soup Button and cook on Normal mode for 30 minutes at High pressure. Shred chicken. Cook pasta according to box directions, drain, and add to soup when ready to serve. Top with parmesan cheese!

For Slow Cooker:

Add all ingredients except pasta and cheese to a large slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours. Shred chicken. Cook pasta according to box directions, drain, and add to soup when ready to serve. Top with parmesan cheese!

For Stovetop:

Add all ingredients except pasta and cheese to a large pot. Bring to a low boil. Boil for 8-10 minutes then bring down to medium-low heat. Let simmer until chicken is cooked through and vegetables are no longer crunchy. Shred chicken. Cook pasta according to box directions, drain, and add to soup when ready to serve. Top with parmesan cheese!
