Breakfast Hot Pocket

Sometimes I struggle to figure out how to start my day with a healthy, balanced, macro-friendly meal. Additionally, there are times where I do not have time to make breakfast. These Breakfast Hot Pockets are a great healthy breakfast option since they are quick and can even be frozen or kept in the fridge if you wanted to make several at one time.

~Time: 15 minutes
Macros: 54C/21F/48P

Ingredients:

Coconut Oil Spray
1 Whole Wheat Tortilla
3 Scrambled Eggs (Use egg whites for lower fat)
1 Laughing Cow Light Cheese Wedge
4 oz Low Sodium Ham
1 tsp Sriracha (to taste)

Instructions:

Spray pan with coconut oil & scramble eggs; remove & place on tortilla. Fry ham in pan until brown. While ham is frying, spread cheese wedge on tortilla. Add ham in tortilla; fold into burrito, then place in hot pan to toast each side. Serve with fruit (macros include watermelon + 2 clementines)!
